Gluten-free Raspberry-Matcha Financiers



  1. Preheat the oven to 200°C (390°F).
  2. Beat the egg whites to stiff peaks in a mixing bowl.
  3. Add the sugar, cornstarch, matcha powder, and almond flour. Combine using a spatula.
  4. Melt the butter in a saucepan and cook until it browns.
  5. Add to the mixture and stir.
  6. Place the Flexipan 6 financier mold on a perforated baking tray and fill evenly with batter. Add 2 raspberries per mold and press them gently into the batter.
  7. Bake for 15 minutes.
